Lebkuchen-spiced Orange Marmalade Pudding Loaf Cake (+travel update!)

Thought I’d put in little tidbits from my personal journal, which I hauled along with me to document almost every day of the past 3 weeks. Starting end of March, it was a whirlwind of everything. Of food, friends, laughter and love. Of things forgotten, of a life well-lived.

As I eat Green and Black’s 70% I am savouring all the elements of the world. I was stopped in my previous entry by all the starters and gorgeous food and faces. Right there. We have basically been eating, sleeping and walking non-stop, and now we will visit the Chopin Museum before trying out a Michelin Star restaurant at which 6 courses cost like 20?? Billie’s (was referring to Billie Holiday here) voice is calming, her swing’s injecting new life and groove into this plaintful morning. Time to rouse myself to the day and delight in its offerings.

ICE. Berlin is done! Now for the train to where half my heart is. I have just eaten the most delicious plum (bakewell) tart. This morning in our stunning, white-clad Airbnb, I awoke with a different conscience, to light that heightened my reason for existing. The plush, take-to-any-form German pillow absorbed all my shallow measurements of being human. Straight from the head. Maybe youth is to balance all this adventure with careful steps. Plus I need to be as neat as the dude who owns this place…

Jesus this brass head is shaky. What does it want from me?

Outside there is a mad bustling, 15th century flourish adsorbed onto the refurbished Tuscan brown walls laden with history and emotion. Here there is such exuberance, passion and fire in every movement of wind. We are in search of culture, gelato (had the best one ever at Vivoli!!) and endless leg trails. I look quite the Asian stereotype. Between us there is a blank, poised honesty.

Schladming, Austria. 5 10pm.

I may not be skiing, but as I sit as this pink-clothed doll’s table with matching doll chairs and the laughter of young ones staining my mind, I realise this is living in a dream I wish not to wake up from, and I’ve never laughed or smiled this much in a long time.

 

And nowwww for some foodie time. Because this is an exciting one (as it always is, but a pumping heart and nostalgic fondness amps it up all the more, smoke trailing in the wind). Once I left that whole parade of Europe I missed it so much I had to whip out something that mildly reminded me of Germany, or Poland, maybe even of the airport, ha. Found some lebkuchen spice from Christmas last year, and no it’s not Christmas, but the attached, sweetly-stinging memory of dark, cold, sparkling nights with a hot mulled something got me going.

It’s hibernating in the oven as I speak. It’s bubbling with currants and Waitrose’s orange marmalade. Little stress, lots of goodness. Originally wanted to make eccles cake, but realised personal cravings for the simple stuff, like a simple, well-formed loaf cake, trumps any creativity attempt that does take more time but does not necessarily satisfy me physically or mentally so much more. It will be drizzled with something incredulously, deliciously regal.

This cake! Down below you will find what I truly think is the most perfect icing ratio! Really really. And I could go on about the ease– in my little book of recipes the directions bit for this has pretty much just one step. Dry and wet, mix mix mix, done, eat, savour, fridge, next day comes and the cycle starts again. This is a delicious, devious cycle. I am glad to say that I am ridiculously healthy outside my Saturday baking shenanigans, these solo explosions of flour and sugar parties. And sometimes moderation must be in moderation.

Why pudding?

Baked for a shorter duration than your typical loaf cake, this was the goal. Goo was the goal, for a slightly wobbly, underdone belly. Tremendous goo (I must stop), complemented by a robust, caramelised edge. Crowned with whatever you want– this time I chose chopped discs of nutty chocolate, a lemon drizzle and more nuts. This part is entirely up to you. This is your emotion on a canvas.

With no eggs in the fridge right after travelling, I made do with a couple of ripe bananas, and it couldn’t have turned out any better. This cake is 100% vegan, which is perfect for anyone who swings that way. No forgetting that all my recipes are veganisable anyway (look at my lovely English)! I find a strange solace in knowing that anyone, anywhere, will be able to whip up any of my creations with ease and grace. I am confident that any fine French patisserie creation can be modified, customised to taste and ethical/dietary preferences. This is your life, after all, and baking need not be outside you. Baking is always with you.

Ingredients

For the pudding cake:

250g plain flour

200g sugar

2 tbsp lebkuchen spice

2 tsp ground cinnamon

half tsp salt

250ml milk of choice (I used Rude Health’s deliciously rice-sweetened almond milk)

2 small bananas, mashed

100ml oil of choice (I used sunflower)

1 tsp vanilla extract

100g marmalade, preferably orange

150g currants (optional)

For the icing:

135g icing sugar

1 tbsp lemon juice

2-4 tbsp water (I needed 2.5)

Directions

Preheat your oven to 162C and grease your loaf pan. Sprinkle a tablespoon of sugar into the pan and tip the pan till the sugar is coated all around the edges and sides.

For the cake, mix together the dry ingredients, then add all the wet ingredients (mashed banana, milk, oil, marmalade and vanilla). The batter should be a light orange-brown and very wet. Pour into the pan and bake for 1 hour and 5 minutes. While it is baking, mix together the icing ingredients and set aside. Once baking time is up, test with a wooden skewer stabbed right in the middle of the loaf; remove the pan if there are moist crumbs clinging to the skewer.

Wait for the cake to cool in the pan for half an hour before removing and drizzling with the icing. Cut and serve on its own, though I have recently discovered the joy of each bite with a little fruit and coconut yoghurt.

 

Rice Cake Molasses Granola

The kitchen seems to have closed upon the death of last week’s get-up. But the smell lingers. It’s rich, dark, carnal. I sit here now recalling the life-giving things of everyday. After making this last Saturday, I hopped over to a new cafe which I implore all of you to check out for some downright good, authentic Danish bakes, then to Piccadilly’s Waterstones for a good 5 hours just to read my heart out, the perfect excuse for not doing work I was meant to be doing. How sad it is to find joy in the unruly, yet how perfectly OK with it I am once or twice a week. It’s true that meaning and mental enlightenment can arise from nothing when given work to do, yet there’s a wild freedom only found in self-direction, reading and exploring things one would only find outside of a lecture theatre, as exciting a lecture may be.

With granola-making on the agenda last Saturday, I shook off the morning grog and effortlessly persuaded myself to Waitrose. Right opposite, to get some oats and rice puffs for a little bit of fancy. I came across a most moreish-looking granola recipe in Honey&Co’s cookbook just earlier in the week, overcome with fiery instinct. Rice puffs are something I always took for granted. Child’s play, too light to be in anything except standard mass-produced granola or cereal bars. This, however, seemed to take granola to something of a new level, choked with Mediterranean spices and a sultry undertone of rarity. Just as I was about to leave the house, my peripheral vision caught sight of these chocolate rice cakes I brought back from Germany just the previous week, and I knew something had to be done with those babies. A mini brainwave hit– why not crush those and chuck them in the granola instead? So I chucked off my shoes and got to work. It was going to be fun.

Starts off all sticky after everything is incorporated, and even seems a bit ‘leaky’ once taken out of the oven, but success is trust. Cooling will let the clusters form, and that’s where all the fun’s at, right? Each huge, outrageously crisp cluster is a thing of dreams. A heavy hand with the molasses will do the caramelisation process, and you, too much good. And of course, like all granola recipes, this is so easily customised. Raisins, nuts, chocolate, add and subtract as you will. How to granola: douse in milk, languish, enjoy.

Rice Cake Molasses Granola (makes one large batch)

Note: all bracketed substitutions are vegan

Ingredients

80g unsalted butter (sub: vegan butter)

120g blackstrap molasses (sub: a rich, dark honey)

110g light brown, soft sugar

100g chocolate-covered rice cakes, chopped into thick chunks (sub: 70g plain rice cakes and 30g chopped chocolate)

70g oats or muesli

150g nuts of choice , chopped (I used walnuts)

100g dried fruit of choice (I used torn dates and raisins, though if you abhor either like many a friend of mine, then feel free to substitute with whatever else you would like, and this recipe works well even without any dried fruit!)

1 tsp cinnamon

optional: 1 tsp ground ginger

 

Directions

Preheat your oven to 190C (375F) and line a large baking tray with parchment. Combine the butter, molasses and sugar in a saucepan and bring to a boil. Take off heat, then pour in the rest of the ingredients.

Transfer to the pan and flatten a little so everything will cook more evenly in the oven. Bake for 10-12 minutes, then take out and let cool for another 10. You will notice a bit of molasses leakage, almost like a liquidy mess at the size. Not to worry, for this is expected. Leaving the pan to cool will rest everything and harden it all up nicely. Use a spoon to break everything up a little, but not too much– leave the large clusters! Store in an airtight container for up to 2 weeks. Enjoy with liberal drizzles of milk, topped with fresh/frozen fruit for a good adjacent tang.

Art-inspired High Tea at the Rosewood

The best London has to offer. In the grey of day-to-day, there are flickers of inspiration, of tonality and light, that truly spark the mini creative in me. There are some things I simply cannot pass up. Like a kind invitation to a wine party. Or a biscuit-and-jam session. Or an Agatha Christie fan club session, or any deep random conversation topic in general. This kind invitation to tea at The Rosewood London was one of them, and for all the right reasons.

Art-inspired? Tea? Scones and dessert? Take my life already. Launching next month, the gorgeous Rosewood will be hosting this artist-inspired tea session in The Mirror Room, and they were kind enough to invite me for a tasting. Just thinking about it now is pretty mind-boggling, for I cannot believe, after a hectic library session, hair and mind messes of tornadoes, that I was bestowed with such beautiful works of art and stunning service. My world was turned upside down for a full 2 hours, and fleeting as that period was, I only have good, no, excellent things to say about the whole experience.

There are no words for the ambience of the Mirror Room, which exudes such sophistication and  old-world beauty. Plush buttoned sofas lined up along the middle of the wide and dimly-lit corridor, waiters like secret soldiers welcoming and smiling. I was Alice, the Mirror Room a very real rabbit-hole.

Now I do apologise for the quality of the photos here– although I did bring  Tim (my camera), the settings messed up halfway and I ended up with just one dark picture, so you will only find slightly inferior iPhone shots here. Still no excuse to not sing high praise for the highlight of my week. I must agree with the words of talented pastry chef Mark Perkins, the hidden star of the show, who also nicely summarised the ethos behind his stunning creations:

“Rosewood London’s quirky interiors reflect the British capital’s history, culture and sensibilities, featuring the works of some of the world’s most renowned artists, with contemporary pieces complemented by more traditional art throughout the hotel.”

The menu is a real work of art in itself. To take you through this fairytale of a teatime, I’ll describe each inspired creation from left to right (1-5) in the picture you see above:

  1. Yayoi Kusama: Goodness. Milk chocolate mousse, passionfruit cremeux with chocolate set, on chocolate sable biscuit, inspired by Kusama’s recent exhibition at the London Victoria Miro galleries. This was one of my favourites, the firm chocolate sable supporting the delicate mousse and cremeux (pudding custard), everything dressed in a vibrant yellow glaze.
  2. Damien Hirst: It would be impossible to forget one’s virgin encounter with Hirst (ok not him, rather his shark-in-a-tank get-up), spellbound by his abstract, almost vulgar creativity. This white chocolate tart flavoured with cassis jelly and yuzu curd is inspired by his pharmaceutical-style series of spot paintings, finished with Hirst-style regimented and decorative pop-art coloured spots of gel.
  3. Alexander Calder: The American is renowned for his innovative approach to art by using wire and industrial materials to craft ‘drawings in space’. This is the inspiration for a delicate but impressive sculpture that combines the flavours and colours of pistachio and cherry. The perfectly executed, tiny cake was glazed with red chocolate, reminiscent of Calder’s famed mobiles.
  4. Banksy: By far my absolute favourite, and so much so that I recreated a caramel-inspired bit of sweet just this morning. I sat there on one of those plush sofas, meditating on the  classic flavours of vanilla and chocolate, amplified by the overall textural complexity. The little cube honoured and perfectly replicated creativity honed and sporadically discovered over so many years, each bite a spark of magic. Banksy’s iconic ‘Girl With a Balloon’ – arguably one of his most famous artworks – provided inspiration for a delicate white chocolate cube filled with a light vanilla cream choux, cherry jelly, hazelnut caramel and chocolate crémeux, garnished with an intricate and tiny replica of the enigmatic artwork itself.
  5. Mark Rothko: Rothko’s bold use of colour has provided the inspiration for a layered coconut and raspberry sponge, filled with coconut mousse, fresh raspberries and adorned with bright pink raspberry chocolate. The flavours here were simple but still admirable.

Do yourself and a loved one a favour and head down to the Rosewood next month for the most unforgettable high tea experience. The whole tea experience comprises a delicate, time-honoured set of finger sandwiches, the five art-inspired works, a glass of champagne, plain or raisin scones, your tea of choice (their pu-erh is potent as potent gets), and the best service you will find in London. It will be priced at £45 per person (£55 per person with a glass of “R” de Ruinart Champagne or £57 per person with a glass of “R” de Ruinart RoséChampagne).

Kaya Avocado Nut Butter Cakes

A homemade gift goes far. In Tuesday’s case, it was my Grandma’s homemade kaya, or coconut jam, lugged all the way from Singapore when my mum came to visit just a few weeks earlier. It was the exact same recipe for the green batch of love I played around with for my kaya maple loaf cake, the recipe for which you can find on Amazon as I speak!! Whew, rush rush rush. Anyways, a throwback was in demand as I held the tubs of curdled emerald goodness. Once again, an odd combination formed the scaffold of more funny kitchen business.

I occasionally find myself refusing to go against instinct for the fast and funny. As a student, the will to carve out day-long space is for something in total artistic favour is admittedly a little impractical with coursework and intense lecture review. There is indeed worth in all that labour, and I look forward to when I can do so without a penny of guilt eating away at the back of my head. It is true creative catharsis.

So you whisk together the dry and wet, fill half your cake molds with the final batter, add a teaspoon of nut butter of choice, then continue filling, then bake. The combination of kaya and avocado was approved by my skeptical flatmate. The best bit, I personally think, is the crusty sugar outside of the whole cake. Mmmmm. Kaya is sweet and, depending on the way you make it or the brand you buy, very coconutty, as green as the pandan leaves used to flavour the homely concoction of coconut milk, eggs and sugar. Avocado pretty much substituted most of the butter in this case, so the final texture of the cake was incredibly tender but not reminiscent of your typical cupcake, which might leave a buttery crumb. Pressing this will leave your fingers dry (and beautifully scented), yet the mouthfeel is airy and moist.

As I’ve touched on before, I do enjoy eating and making vegan meals and desserts, especially after all those silencing documentaries and Youtube lectures I’ve watched on the veggie movement. Though I am not full vegan for personal and family reasons, I will now officially include vegan or at gluten-free versions for all my recipes. I only want this blog to cater to all types of dietary needs, so if any of you feel like something is amiss, please feel free to email or DM me.

Kaya Avocado Nut Butter Cakes (makes 6-7 cakes)

Ingredients

*= vegan substitute

190g plain flour (*same weight of gluten-free flour)

a generous pinch of salt

1 1/2 tsp ground cinnamon

1  1/2 tsp baking soda

300g kaya (*recipe for vegan kaya below, using 1 sweet potato, 1 tsp pandan extract, 80ml coconut milk and 3 tbsp coconut or maple sugar)

1 tsp vanilla extract

1 egg (*1 mashed banana)

120g white caster sugar (*same weight of coconut sugar)

1 mashed avocado

3 tbsp olive oil

optional: nut butter of choice

 

Directions

*to make vegan kaya: Roast one large sweet potato (about 200g) at 200C for half an hour or until soft and mashable. Using a fork or blender (you pick the easy way out, ha ha), mix with the rest of the stated ingredients. And there you have vegan kaya! You should be able to use all the kaya you make, but weigh out 300g to be sure.

Firstly, preheat your oven to 180C and grease a 8 of your muffin tins. In a large bowl, whisk together the dry ingredients: flour, salt, cinnamon, baking soda and sugar. Add the rest of the ingredients excluding the nut butter and mix well. You should have a thick, green batter of easy dropping consistency. If it’s too thick, add a drop of milk/nut milk until you get the desired consistency.

Fill your cake molds halfway up, then add a teaspoon of  nut butter to the centre, then continue to fill with the batter until the mold is 3/4 full. Bake in the preheated oven for 20 minutes. Serve with more nut butter, yoghurt, honey and frozen berries (trust me on this one).

Black Sesame Cinnamon Rolls (easy, eggless)

I never expected a single public holiday to represent such freedom. Quite loving this mind shift, this change of tide, in the sense that I now savour small things like this. Like a short breather in between a long-range marathon. After all this time, I still get excited about writing blog posts for you guys, and creating different, easy-to-make (usually) recipes on all things breakfast and sweets. So it feels good to finally getting round to blabbering a little bit more in the morning. Indeed, I wouldn’t mind some pipette work in the lab, mind to matter, but days away from its calming sterility call for things I love most– drawn-out bouts of journalling, reading, watching, feeling, thinking, loving. With lots of coffee and tea, of course.

Back in my first term at college, I modified a recipe for eggless cinnamon rolls out of pure circumstance. I didn’t wish to make them specifically for a vegan friend, though these turn out to be quite the treat if you do wish to make it vegan (simply change the milk and butter you use), and one wouldn’t be able to tell the difference anyway. The crunch of the black sesame pressed into a cinnamon-sugary-sweet filling is heaven in this one. The dough itself is satin and fluff, easy to tear and almost melt-in-your-mouth.

Black sesame cinnamon rolls, stuffed with a cinnamon sugar sesame filling, topped with a classic cream cheese frosting.

I’ve talked about these already in my first post on the recipe, so do go check it out, especially for some side profile sass and another cute flavour approach. The black sesame in this one elevates the humble bun’s sophistication, and adds several health benefits to something that’s not exactly the most healthful breakfast (ha). Rich in iron, calcium, zinc and B vitamins, just a sprinkling of the seeds lends quite a boost to your day’s nutritional profile. I’m not trying to deceive myself or any of you into thinking these are actually good for you, but hey, the sprinkle is still something, and it’s intriguing and fun to think about, at least to me.

Black Sesame Cinnamon Rolls (makes 9 mini rolls)

Ingredients

For the dough:

2 1/4 tsp instant yeast

1 cup (240ml) milk– I used a mix of almond and whole

45g (3.5 tbsp) butter

250g (around 1 3/4 cups) plain flour, plus more for sprinkling on counter before kneading

3 tbsp black sesame powder, which you can usually buy from your local oriental store

pinch of salt+1 tbsp sugar

Vegan version: use a plant-based milk (almond/rice/soy) in place of regular milk, and vegan butter (Earth Balance)

 

For the filling:

45g (3.5 tbsp) butter, softened to room temperature

3 tbsp black sesame powder

large handful black sesame seeds

7 tbsp sugar mixed with 2 tbsp ground cinnamon

 

For the glaze:

50g icing sugar, sifted

25g cream cheese, softened

2-3 tbsp cream

 

Directions

Dough: In a microwave-safe bowl or in a saucepan over low heat, heat together the milk and butter until the butter has melted and the mix is warm (not scalding) to touch. Pour the mix into a larger bowl, then sprinkle on the yeast on one side of the bowl, and the salt and sugar on the opposite side. Wait 5 minutes, then add a half cup of flour at a time, stirring with a wooden spoon between each addition, followed by the black sesame powder. Once the dough is too thick to stir, transfer to a lightly floured counter and knead for 2 minutes. The final result should be a smooth, rather taut ball of dough, so you may need slightly more or less than the aforementioned quantity of flour. Briefly grease the same bowl, pop the ball of dough in and let it rise until it doubles in size–around an hour. At this point, preheat your oven to 176C (350F) and liberally grease an 8×8-inch pan.

After the dough has risen, lightly flour your counter again and turn the dough out onto the counter. Roll it out into a half-inch thick rectangle. Brush on (I just used my hands here) the butter that’s softened to room temperature, then sprinkle on the cinnamon-sugar mix, black sesame powder and black sesame seeds. Tightly roll the dough from the long end, so you end up with a long, pale tube of dough. Place the roll seam side down, and using a serrated knife, cut your tube into 8-9 rolls, each around 1.5 inches thick. Place them into the greased square pan. Cover the pan with foil to avoid over-browning and place inside your preheated oven. Bake the rolls for 20-25 minutes.

While they’re baking, mix together the ingredients for the glaze in a small bowl. Once the rolls have finished baking, leave to cool for 10 minutes, then go ahead and glaze the heck out of them. Sprinkle on some black sesame seeds to top. These rolls are best eaten immediately or at least the day they’re made, however you can keep them for the next day and microwave them to revive a bit of tenderness.
